Wine growns half in stainless-steel tank (temperature controlled) and half in oak barrel. Second fermentation in bottle and aged during at least 18 months, reflection of Chardonnay on its soil.
Gold robe with light golden hints and let us see a nice cordon of fine and generous bubbles. The nose is frank and complex, its vinification, half in stainless steel tank and half in barrels, highlights Chardonnay and its soil. Good freshness, hints of white fruits, flowers and of its ageing (woody and vanilla) express themselves in the nose and the palate. Limestone’s veins of this soil bring minerality to this cuvee; well-balanced, a long and persistent finish.
Use a decanter (swan neck) and pair it a filet of turbot with citrus butter or scallops perfumed in Yuzu.
